#1 Dates & Anjeer Laddoo
Ingredients:
- 2 cups of chopped dates
- 1 cup of dried figs or anjeer
- 1 cup of chopped mixed dry fruits (cashew, almond, pistachio)
- 1/4th cup desiccated coconut
- 2 tablespoons white sesame seeds
- 25 ml pure cow ghee
Method:
- Blend dates and anjeer in a blender
- Dry roast mixed dry fruits in a pan for 3 minutes
- In the same pan dry roast desiccated coconut and sesame seeds
- Heat ghee in a heavy bottom vessel and sauté the dates and fig mix for 5 mins on medium heat
- Now add roasted nuts, coconut and sesame seeds and mix till everything comes together
- Grease your palms with ghee and make small laddoos once the dough has cooled
- Roll them in desiccated coconut and sprinkle sesame seeds before serving
#2 Healthy Peanut Laddoo with 3 ingredients
Ingredients:
- 1 cup raw peanuts
- ¼ cup powdered jaggery
- 1 tablespoon melted ghee
Method:
- Dry roast raw peanuts in a heavy bottom pan till peanuts turn crunchy on low heat for 4-5 mins
- When cool rub the peanuts in your palms to peel off their skin.
- Grind the peeled peanuts in a coarse powder for 1 min
- Add jaggery powder and ghee and grind again to a fine texture
- Make laddos from the mixture, store them in a tight jar

Ingredients:
- Milk 500ml
- Lemon juice – 1and ½ tablespoon
- Cocoa powder - 1 teaspoon
- Chocolate chips - 1 tablespoon
Method:
- Boil milk and reduce the temperature. Add lemon juice to curdle milk and make paneer
- Wash and hang the milk solid/paneer in muslin cloth for 15 mins to drain excess water
- Knead the paneer on a plate for 4-5 mins
- Add cocoa powder while kneading
- Heat a non-stick pan and stir this mixture for 3 mins or till you see the texture turn smooth
- Take off heat and add chocolate chips
- Make round balls out of the mix and garnish with chocolate chips.

#1 Baked Multigrain Nan Khatai
Ingredients:
- ¼ cup ghee
- ¼ cup powdered jaggery
- pinch of elaichi powder

- ¼ cup whole wheat flour
- 1 tablespoon each of ragi flour, jowar flour, bajra flour, powdered oats
- ¼ teaspoon baking powder
- ⅛ teaspoon baking soda
- sliced almonds, for garnish
Method:
- Combine ghee and powdered jaggery in a mixing bowl for 2 mins
- Add elaichi and nutmeg powder
- Add all the multigrain flour to the wet ingredients and mix
- Add baking powder and baking soda and knead it into a soft dough
- Cover and refrigerate for 30 mins
- Separate dough into 8-10 small balls, place them on a lined baking sheet and bake in a pre-heated oven for 25-30mins at 180°C
- Let them cool on a wire rack to make them crisp
- Garnish with sliced almonds
#2 Air Fryed Methi Mathri
Ingredients:
- 1 Cup Whole Wheat Flour
- 1/2 Cup All Purpose Flour
- 1/4 Cup Suji
- 3 Tbsp Dry Kasuri Methi
- 2 Tbsp Ghee
- 1/2 Cup Water – for dough
- 2 Tbsp Ajwain
- 1 pinch Turmeric Powder
- 1.5 Tbsp Salt to taste
Method:
- Pulse all the dry ingredients in a food processor
- Add water to make dough
- Divide dough into small parts
- Roll them like a cookie and make marks with a fork
- You can either bake them in the oven for 15 – 20 mins at 180°C or air fry them
- Pre-heat air fryer at 180°C for 2 mins
- Lay out the rolled mathris in the basket and air fry for 10 mins or until they turn golden
#3 Diwali Paneer Tikka Recipe
Ingredients :
- 200g Paneer cut into small square pieces
- Curd 2 tablespoons
- Green chillies – 2 chopped
- Himalayan pink salt to taste
- Buckwheat flour or Kuttu atta 2 tablespoon
- Grated ginger
- Ghee – 1 teaspoon
Method :
- Mix curd, Himalayan pink salt, chopped green chillies and grated ginger, kuttu atta, ghee in a mixing bowl.
