Incredibly simple to make and super tasty, this light salad has just 5 ingredients and can be served alongside anything. It offers a sweet, pickly crunch that’s great with spicy foods, grilled meats and even as a refreshing snack.
A note on Banga cucumbers: Every I Say Organic farmer uses the local or “desi” varieties of seeds. Often these are heartier than imported seeds because they have adapted to the climate and environment. Banga cucumbers grow even in the hot desert region of Rajasthan. They have a sweeter taste than regular cucumbers and are perfect for this salad.
Thai Cucumber Salad
3 or 4 Banga Cucumers
1 small onion
3 tablespoons Rice Vinegar
Sugar or Honey to taste
Crushed red chillies or a little fresh chilly
In a bowl, mix 3 tablespoons of rice vinegar, 1 teaspoon of sugar or honey and chillies.
Chop the cucumbers into bite sized pieces.
Mix the cucumbers with the vinegar dressing.
Let it sit in its dressing in the fridge and serve.
