Baked Capsicum

Delicious capsicum gets even better stuffed with delicious organic veggies! Learn how you can make this easy and tasty recipe:

Ingredients:

Capsicums (Red and Yellow)

1/4 cup cup (60ml) oilive oil

150g paneer

150g cherry tomatoes

1 small onion, thinly sliced

lemon

garlic clove

1/2 cup torn basil leaves

Method:

You first need to preheat your oven to a 180 degress celsius.

While your oven is heating up, take the capsicums and slice them in half. Clean them from the inside out.

Next, take the oilve oil and coat the outise of the capsciums and place them on the baking tray.

Grate the paneer into a separate plate.

Slice the tomatoes and the onions. Crush the garlic. Also, tear half the basil.

Take the lemon and grate the rind.

Take the whole mixture together and mix well. Add to each capsicum until you are satisfied that it is as stuffed as possible.

Drizzle the rest of the oil over the capsicums and put in the oven and bake for 20-25 minutes.

And Voila! You have a healthy evening snack or a dinner, depending on how hungry you are!
