Soup For Summers

This raw vegan soup is very simple to make with minimal clean-up and they are very easy to digest. You can also add your favourite herbs and spices to the mix  and once you feel confident with the method start adding other water rich veggies such as cucumber, celery etc bringing more and more nutrients.

Because this is a raw soup the enzymes are high and the vitamin level also is optimum. The high water level also ensures hydration for you so essential during the scorching summer season.

Soups are also easy to package up so you can take them with you to work, share with a friend    or take this high nutritional meal with you on an outing.

Eating this soup once or twice or more a week is a brilliant way of giving your digestion a rest and even a mini clean up. This soup has many health benefits you can chop and change the ingredients too depending on what’s available in your kitchen at the time and what is in season.

Ingredients for the soup:

3 Tomatoes

1 Yellow pepper

½ Avocado

60g Spinach

1 cm Fresh Ginger

1 clove garlic

½ red chili

Serves 2

Tip: If you want it to be slightly warm you can add warmed water, but do not boil this soup!
