We present the best thing for that chilly evening – organic soup recipes! With or without garlic bread, with or without nut milk – winters are always best with stewy, hot goodness! Here are some easy recipes for you to cook up in a jiffy!

Ingredients

Method

  1. Use a large pot to make this soup. Sauté the onion and garlic in oil for about 5-6 minutes over medium heat. Add in the celery and sauté for a few minutes more.
  2. Stir in the bay leaf and the spices.
  3. Stir in the diced tomatoes, water or broth, and lentils. Bring to a boil, and then simmer, uncovered, for about 20-25 minutes, until lentils are cooked.
  4. Stir in kale or spinach and season, adding more spices if needed.

Ingredients

  • 4 zucchini chopped
  • 1 kg squash like pumpkin, peeled and cut into 1-inch pieces
  • 1 bay leaf
  • 5 cups water or vegetable broth
  • Salt and black pepper
  • 2 teaspoons olive oil
  • 1 tablespoon fresh rosemary, roughly chopped
  • ¼ cup shelled raw pumpkin seeds

Method

  1. Place the zucchini, squash, bay leaf, broth, some salt and pepper in a large saucepan and bring to a boil. Simmer and cook till the squash is tender.
  2. Remove and discard the bay leaf. Puree the soup in a blender until smooth in batches.
  3. Heat oil in a pan. Add rosemary and pumpkin seeds, and stir until fragrant.
  4. Ladle out the soup and garnish with rosemary mixture.

  1. Heat oil in a large saucepan over medium heat. Cook onion until soft, then add cumin, ginger, salt and pepper and cook until fragrant.
  2. Add the tomatoes, chickpeas, cauliflower, and 1 cup of water and boil.
  3. Simmer till the vegetables are tender and the liquid has slightly thickened.
  4. Stir in the spinach and cook until just wilted.
  5. Place dalia in a bowl, cover with soup and serve.

Ingredients

  • 4 large carrots, sliced into 2-inch pieces
  • 2 medium turnips, peeled and cut into 1-inch cubes
  • 1 large onion, diced (about 1 cup)
  • 2 garlic cloves, minced
  • 500 gm tomatoes, diced
  • 1 zucchini, cut into 1/2-inch slices
  • 2 cups water or vegetable broth
  • Salt
  • ½ teaspoon ground cumin
  • ¼ teaspoon crushed red pepper flakes

Method

  1. Combine the carrots, turnips, onion, garlictomatoes , broth, salt, cumin, and pepper flakes in a pressure cooker. Cook till 4 or 5 whistles and then simmer for about 15 minutes.
  2. Check the consistency and cook for 1 or two whistles more if required. Serve hot.
