7 ways to use Rocket Leaves

Rocket Leaves (also called Arugula Salad Leaves) are very healthy and are known for their distinctive, bright, and sharp flavor.

Order them from I Say Organic and try out something new everyday with our accompanying 7 different recipes.

1. Pesto and Rocket Crostini

Ingredients:

1 baguette

2-3 tablespoons pesto

About 2 cups fresh Rocket leaves

Olive Oil
Optional Add-Ons:

Fresh mozzarella

Tomato slices

Sautéed mushrooms

Green peas

Method:

Preheat oven to 350 degrees.

Cut baguette into about 1/2″ thick slices, and lightly brush with olive oil. Bake for about 8 minutes.

After slices have cooled, brush with pesto, top with Rocket leaves and any other desired toppings.

 

2. Broccoli and Rocket Soup

Ingredients:

1 tablespoon olive oil

1 clove garlic, chopped

½ onion, diced

1 head broccoli cut in small florets

2 ½ cups water

¾ cup Rocket Leaves

Salt and pepper to taste

Lemon slices for serving

Method:

In a large saucepan, heat oil over medium.

Add onions and sauté until translucent. Add garlic and sauté for another minute or so.

Add broccoli and cook until it is bright green, about 4 minutes.

Add water, salt and pepper to taste. Bring to boil, then cover and lower heat. Cook until broccoli is tender, around 8 minutes.

Carefully pour soup into blender and add Rocket leaves, blending until smooth. Serve with lemon slices.

 

3. Rocket Gimlet

Ingredients:

0.25 oz. Green Chartreuse

2 oz. Gin

0.5 oz. Demerara

0.5 oz. Lime

Small Handful Rocket Leaves and other mixed greens

Method:

Muddle the greens in the lime and sugar.

Add the gin, chartreuse and ice. Shake, double strain, garnish.

Sit back and enjoy.

 

4. Rocket Dressing

Ingredients:

A bunch of Rocket leaves

50ml olive oil

1 teaspoon seeded mustard

Juice of half a lemon or lime

Salt and pepper to taste

Optional:

Lettuce

Tomatoes

Method:

Blend rocket leaves, olive oil, mustard and lime juice.

Season with salt and pepper, and blend again.

In a bowl, mix lettuce with tomatoes.

Pour the dressing over and serve.

 

5. Rocket Pesto

Ingredients:

4 cups packed rocket leaves

¼ cup olive oil

¼ cup pine nuts

¼ cup Parmesan (optional)

1 garlic clove, peeled

Salt and pepper to taste

Lemon juice to taste

Method:

Place rocket leaves, pine nuts, garlic and parmesan in a food processor.

Blend until nearly smooth, adding the olive oil in gradually while it’s running.

Serve within a day at room temperature.

 

6. Watermelon and Rocket Leaves Salad

Ingredients:

5 cups Rocket Leaves

8 cups watermelon, cubed

1 1/3 cups feta cheese

1 tablespoon fresh mint, chopped

1 tablespoon balsamic vinegar

1 tablespoon olive oil

Salt and pepper to taste

Method:

Whisk oil and vinegar in a small bowl.

Place Rocket Leaves, watermelon and feta in a large bowl, and drizzle vinegar and oil mixture and chopped mint over it. Toss.

Refrigerate for about 15 minutes before serving.

 

7. Pizza Topping

You can use rocket leaves as a pizza topping. Top with different cheeses or even crunchy veggies. Just remember to put the leaves on after the pizza has baked.
