Last month we hosted lunch and breakfast for our buds at Doodlage, India. They hosted some super creative and fun workshops all around sustainability and fashion in POND, Safdurjung. It was a delight to be the food partner. We did DIY salads on both days – a Red Quinoa and Veggies Salad for lunch, while for breakfast on Sunday, we did a Fruit bowl with Yogurt, Seeds and some sunshine! Have a glimpse here. We heard some humbling reviews on the goodies we served and decided to share the love and the yumstuff with all those who couldn’t make it – through this blog!

Here are 2 quick dressings you can make at home using very few ingredients (yes, they are all available at I Say Organic ;)) and one mason jar!

I. Pomegranate Molasses, Olive Oil, Garlic

A robust dressing made of our organic Pomegranate Molasses and Amlaan’s pure Olive Oil (organic, of course). Pomegranate Molasses is a healthy sweetener substitute that has an exotic, naturally sweet and slightly tart flavour. It is used in abundance in its place of origin – the Middle East. Our molasses is made of reduced pomegranate juice, that we produce in house with our fresh pomegranates. Lemon acts as a setting agent and a natural preservative. Mixed with Amlaan’s aromatic olive oil, garlic and basil – this dressing can make your meal go from mehh to yeahhh easily, leaving you wanting for more! The dressing goes really well with crunchy greens, quinoa, oven or pan roasted vegetables amongst a variety of other things.

Ingredients

Please note, this serving size makes for a quantity that can last multiple sessions. You can reduce the percentage as per your liking and need.

4 tbps pomegranate molasses
1/4th to 1/3rd cup of Amlaan olive oil
6-8 garlic cloves, finely diced
A sprinkle of fresh or dried basil leaves (preferably not shop bought!)
Juice of 1 small lemon
Himalayan Pink Salt
Pepper

Method
Add all the ingredients to a mason jar – shake shake shake – and it’s done! The best thing is that you can use the same jar for storage :) The dressing gets better with time and is good for consumption for up to 2 weeks, at least.

II. Apple Cider Vinegar & Honey

Zingy, citric, sweet ..and super good for the soul! Our special Vinaigrette is a delicious yet an easy-to-prep addition to any or all salads. It’s quick, delicious, healthy and refreshing!

The Apple Cider and Honey Vinaigrette pairs perfectly with crunchy greens, fresh cut veg and super-grain salads – like the one in this frame!

Our Apple Cider Vinegar is a natural probiotic as it has its mother-culture intact. ACV, if consumed regularly, helps with weight loss, reducing cholesterol, lowering blood sugar levels and is diabetic-friendly. This, paired with our Multi-floral Wild Forest Honey makes for a delicious combination. If you want to go completely diabetic-friendly, you can choose to mix our Kala Jamun Flower Wild Forest Honey – it has a lower Glycemic Index.

Ingredients

Please note, this serving size makes for a quantity that can last multiple sessions. You can reduce the percentage as per your liking and need.

1/4th cup Wild Forest Honey
1/4th cup Apple Cider Vinegar 1/4th cup Olive Oil
1 tsp of Red Chilli Powder
Dried herbs (of your choice – basil, sage, rosemary, oregano)
Himalayan Pink Salt Pepper

Method
Put everything in one mason jar – shake shake shake – that’s it! The consistency should be that of a vinaigrette for both. This dressing, similar to the one above, gets better with age (of course both need to be handled well – no foreign fingers or spoons in the jar please!) and can be stored in the very same jar you made them! Little cleaning. No waste. Lots of flavour.

Look, a foodie tip - Soak Dried Tomatoes in this acv & honey vinaigrette, for added flavour, texture and happiness! The tomatoes soak in the juices – making them moist again, while also releasing their robust flavour in the dressing!

And hey chef – yes we are talking to youu – if you’ve got any feedback or suggestions on how to make them salads fun, delicious and wholesome – please share via a comment below.

Happy cooking, everybody!
